PUMPKIN SPICE CUPCAKES

PUMPKIN SPICE CUPCAKES Pumpkin spice cupcakes or muffins – either way this grain-free date-sweetened recipe is the perfect fall snack or frosted dessert! Jump to Recipe Or muffins. They can pull off the frosting-free look quite flawlessly too. I posted these chocolate cupcakes last week, and judging by the remake rate since I think we can agree that cupcakes are quite possibly the most perfect dessert form. Chic. Shareable (or not). Less work than a cake. More frosting than a muffin. And actually healthy with a little date-sweetening savvy. However I got a lot of questions asking for a grain-free option. WHICH I AM THRILLED ABOUT. Not because I had a ready and tested answer, I didn’t (although I do now!) But because I am obsessed with grain-free baking at the moment (a. it makes me feel good and b. almond flour is the best thing ever), and clearly I am not the only one. I was worried you wouldn’t be on board with the subtle oat → grain-free shift that has been taking place around here,...

SALTED CARAMEL APPLE TARTLETS THESE SALTED CARAMEL APPLE TARTLETS ARE NOT ONLY AMAZINGLY DELICIOUS, BUT BEAUTIFUL TOO! THIN APPLE SLICES ARE ARRANGED TO LOOK LIKE A ROSE AND DRIZZLED WITH A YUMMY, SPIKED SALTED CARAMEL SAUCE. My friend Vanessa gave me these beautiful apples from her CSA box. I was surprised that apples are still growing this time of the year in the Pacific NW. They were perfectly crunchy and tart and just begging to be baked into something delicious! Since Valentine’s day is right around the corner, I opted to do something fitting for the season – Salted Caramel Apple Tartlets. I also got a new toy this weekend. Something I’ve been wanting for quite a while… A mandoline! And, I LOVE it! These nifty tools slice, julienne and make waffle cuts. They slice REALLY thin. I decided that these apples would be the perfect vehicle to put my new tool to the test. Layers of apple arranged to look like little rosebuds. The slices need to be extra thin so that they are pliable enoug...

Basic White Cake Cupcakes The thing about making sweets which makes me think I’ll never tire of making them, well, of course, besides the delicious taste, is the absolute wonderful variety in decorating ideas…. endless! Sweet art really. And lately what’s been captivating me are those gorgeous buttercream flower cakes. Have you seen them? One of my favorite examples is ivenoven from Jakarta. I follow her on Instagram and have based these cupcake here off of her designs (Thank you!). I really do need to practice making the flowers, but it was fun seeing the different results of playing around with different piping tips and angles. I’m definitely not ready to share a tutorial, but I’ll share more on the tools I used to make these below. When it comes to flavours, the possibilities there, too, are endless. For those of you with lactose intolerance I’ve found a new ingredient to add to your fridge. Lactose-free milk! I have been sponsored by Lactaid to try out their milk in a recipe and sh...
